Who doesn’t love a good simple blender pancake recipe! This has been my go-to recipe for quite a few years, and my girls’ favourite for Saturday Pancake Party. It couldn’t be much simpler; it takes literally minutes to throw your ingredients in the blender jug, 20 seconds to blend, and you scoop the pancake mixture straight out of the jug into a hot pan.
Blender pancakes have no lumps
Any recipe that suits a blender is a good recipe in my book. By far my favourite kitchen appliance – my blender actually gets to live on the bench top unlike others which are banished to the deep, dark pantry…. And pancakes in a blender have no lumps! Choose a blender that cleans itself afterwards, like my Optimum 9400 in the picture below, and life becomes even easier.
Yes, I admit, this is not an ultra-healthy, no-fat no-carb recipe… I justify this by the sheer look of happiness on my girls’ faces when it’s Saturday, the shared joy of having a weekly pancake party together, and there’s no processed crap and only a tablespoon of sugar.
Easy Dairy-Free Blender Pancake Recipe
This pancake recipe has super simple ingredients. Just milk, eggs, oil, sugar, salt and flour. You can easily adapt this recipe to suit a dairy-free diet by swapping cow’s milk for rice milk, almond milk, coconut milk or soy milk. Almond or rice will give the nicest outcome in my opinion, unless you love the taste of coconut. Almond especially will add a nice nutty flavour.
What are these blender pancakes like?
They’re yum! These pancakes aren’t the thick type; they’re thin little fellas you can roll up and hold in your hand. I’ve folded them too, with a spicy mince mixture inside for hubby. If you’re using them for spicy mince, leave the sugar out of the mixture though. Another hubby-favourite would be bacon and fruit like banana or peach, with golden syrup. You can leave the sugar in or out for that one.
These pancakes hold together well and you can make them as thin as you want without them falling apart. I have a 20cm frying pan and use a soup ladle to measure; about a 3/4 scoop per pancake.
How to make this blender pancake recipe
This is so easy you’ll literally be done in minutes. Without the frying that is. The frying always seems to take time, especially on an electric cooktop which seems to take forever to get the pan nice and hot for pancakes.
I’m using the 750ml blender jug for this recipe, which is an add-on accessory from Froothie. It doesn’t come with the blender when you buy it, but I highly recommended you buy it separately. I rarely use the big jug now; the little one is so easy to use and clean and plenty big enough for most of the things I make in a blender. For some things like pesto and mayonnaise the big one doesn’t really work at all but the small jug smashes it!
So, add the milk and eggs first. If you start with the milk you can use the measurements on the blender jug without needed a separate measuring cup. Add milk to the 500ml mark, then add 2 eggs. Add your oil of choice, 1 tablespoon of sugar, a pinch of salt, and then the flour. Adding the liquids first helps the blender pull all the other ingredients down, resulting in a nice smooth pancake batter.
Slowly increase your blender speed to speed 5 (that’s a medium speed on my Optimum), blend for 20 seconds, done. Use a soup spoon to scoop the pancake batter into a nice hot frying pan. Fry until the top is cooked, flip, fry for another 30 seconds or so and turn out onto a plate.

Blender Pancake Recipe – 5 Minute Super Simple Pancakes
Super easy blender pancakes, the only recipe you’ll ever need.
- 500 ml Milk of choice (Dairy, Rice, Almond, Coconut or Soy. Mine were made with full fat dairy milk.)
- 2 eggs
- 2 tbsp Oil of choice (I used olive oil)
- 1 tbsp Sugar
- Pinch Salt (Use himalayan for extra trace minerals)
- 1 1/4 cup Plain flour (You can use self raising flour too if you’re out of plain)
- Add the milk to your blender jug to the 500ml mark.
- Add the 2 eggs and 2 tablespoons of oil
- Add 1 tablespoon of sugar, a pinch of salt and the flour
- Slowly increase blender speed to medium (speed 5 on my Optimum 9400 blender) and blend for 20 seconds
- Use a soup spoon or other big spoon to scoop into a hot frying pan sprayed with a small amount of oil. Fry until the top is cooked, then turn and fry another 30 seconds to 1 minute. Turn out to a plate and repeat!
- Use any milk you like. My recipe uses standard cow’s milk.
- Use any oil you like. I’ve used olive oil, sunflower oil and coconut oil before and they all work well.
- If you want to keep them hot, boil some water in a pot with the pancakes on a plate on top of the pot, like a bain marie.
- Serve with whatever you like; syrup, lemon, fruit, ice cream, bacon – your choices are endless!
- Hubbies favourite is spicy mince, folded inside the pancake.
- Leave out the sugar for savoury pancakes.
